Whisky (no ‘e’) is the spelling used in Scotland, Japan, Canada, and most of the world. Whiskey (with ‘e’) is used in Ireland and the United States. The difference is purely geographic convention — both refer to the same type of distilled grain spirit. Single malt Scotch whisky is made entirely from malted barley at a single distillery, matured in oak casks in Scotland for a minimum of three years. It is prized for its distinctive, distillery-specific character.

Scotland’s main whisky regions each have distinct flavour characteristics:

The age statement on a whisky bottle (e.g. “12 Year Old”) refers to the minimum number of years the youngest whisky in that bottle spent maturing in oak casks. Older doesn’t always mean better — many exceptional whiskies carry no age statement (NAS) and are blended for flavour rather than age. That said, longer maturation generally adds complexity, depth, and mellowness, which is why aged expressions command higher prices.

Cask strength (also called barrel proof) whisky is bottled directly from the cask without dilution to a standard strength. This means the ABV can range from around 55% to over 65%, delivering intense, concentrated flavours. Many whisky enthusiasts prefer cask strength expressions because they allow you to add your own water to personalise the experience. They are generally more complex and bold than standard bottlings of the same expression.

There are no rules — drink whisky however you enjoy it most. That said, a few drops of still, room-temperature water can genuinely open up the aromas and flavours of a premium dram, particularly for higher-ABV expressions. Ice chills the spirit and can suppress some aromas, but many people enjoy whisky on the rocks. For a rare or premium bottle, we’d recommend trying it neat first to experience the full character, then adding a small drop of water to see how it changes.

Our tip: try your dram neat, then add a single drop of water. You’ll be surprised how much it changes — sometimes for the better.

Japanese whisky was heavily inspired by Scotch tradition but has developed its own unique identity — typically lighter, more delicate, and extraordinarily balanced. Distilleries like Suntory (Yamazaki, Hakushu) and Nikka have won global awards and sparked a surge of international interest. The combination of Japanese craftsmanship, precision, and the use of local Mizunara oak casks has created truly distinctive expressions that are highly sought after worldwide. Demand now significantly outstrips supply, making many Japanese whiskies rare and valuable.

Scotch whisky is made primarily from malted barley, distilled and matured in Scotland for a minimum of three years, typically in used oak casks. It must be bottled at a minimum of 40% ABV.

Bourbon is an American whiskey made from a grain mash of at least 51% corn, matured in new charred oak barrels (no minimum age, but must be in the US). The new oak and corn give bourbon its characteristic sweetness — vanilla, caramel, and spice — compared to Scotch’s more complex, varied profiles. Both are excellent; the best choice depends on personal taste.

Irish whiskey is typically triple-distilled (vs. Scotch’s double distillation), resulting in a smoother, lighter, and more approachable spirit. Irish whiskey must be matured for a minimum of three years in wooden casks in Ireland. It uses a mix of malted and unmalted barley (giving a distinctive “pot still” character unique to Ireland) alongside grain whiskey. The Irish whiskey category has undergone a remarkable revival, with dozens of new distilleries opening and producing exceptional expressions.

Unlike wine, whisky should be stored upright — never on its side. The high alcohol content can degrade cork over time if in constant contact. Store bottles in a cool, dark location away from direct sunlight and significant temperature fluctuations. Once opened, a bottle can retain its quality for 1–2 years if stored correctly with a tight seal. For rare or collector bottles you don’t intend to open, keep them boxed in stable conditions to preserve value.

Unlike wine, whisky does not continue to mature or improve once bottled — all the ageing happens in the cask, not the bottle. However, old bottlings — whisky bottled decades ago — are highly sought after because they capture the character of whisky made with older production methods and ingredients. A bottle of Scotch bottled in 1965 can taste distinctly different from the same distillery’s current release, which is why vintage bottles command significant premiums.

A closed (or “silent”) distillery is one that has permanently ceased production. Once the remaining stock is bottled and sold, no more whisky from that distillery can ever be made — making every remaining bottle irreplaceable. Famous examples include Port Ellen, Brora, and Rosebank in Scotland. Bottles from closed distilleries are among the most sought-after and valuable in the whisky world, with prices often reaching thousands of pounds at auction.

An independent bottling is whisky purchased from a distillery by an independent company (such as Gordon & MacPhail or Cadenhead’s), matured and bottled under their own label.
